Will LoopSuite post messages in my Slack channels without me?

No. LoopSuite reads the channels and threads you allow and drafts replies, but nothing posts to a channel, thread or DM until you approve it. Every message waits for your tap first.

Can LoopSuite reply to a customer question in a shared client channel?

Yes. Point it at the channel and it drafts a reply in your tone using the thread's context. You review the draft and approve before it appears — the customer never sees anything you haven't okayed.

Does it need access to every channel in our workspace?

No. You choose which channels LoopSuite watches — just #jobs and a couple of client channels, for example. It ignores the rest, so private and off-topic channels stay out of scope.
